Ingredients

10 pieces
  • 3 cupsSelf-raising flour
  • 3–6 tbsp (adjust to taste) Sugar
  • 1.5–3 tsp Lemon zest
  • 1whole + ½ of a second egg (whisk and use half) Egg
  • 6 tbspOil
  • 3/4 cup(plus 1–2 tbsp more if needed) Milk
  • 1.5–3 tbsp Lemon juice
  • 1.5–3 tsp Vanilla extract

Steps

  1. 1

    Preheat oven to 200°C.

  2. 2

    Mix flour, sugar, and lemon zest in a bowl.

  3. 3

    In another bowl, whisk egg, oil, milk, vanilla, and lemon juice.

  4. 4

    Pour wet into dry; mix gently. Adjust with flour or milk for soft, non-sticky dough.

  5. 5

    Cut and shape dough into round disks.

  6. 6

    Place on a greased or lined tray.

  7. 7

    Brush top with milk if desired.

    Bake 15–18 minutes until risen and golden.

Tips

The lemon adds a gentle twist in flavor, not overpowering but refreshing.
