Creamy Kidney Beans Curry (Rajma) with Spinach and Potatos
This curry warms your heart! Can be eaten with rice, whole wheat tortillas, roti or naan :)
Steps

Sauté onions and garlic in butter until soft.

Add cumin, turmeric, coriander, garam masala, and chili powder. Stir for 1 min.

Add potatoes and let it cook for 3-4 mins. Add Kidney beans, and leafy greens afterwards. Mix well.

Pour in water or vegetable broth, add salt, and simmer until vegetables are tender.

Stir in nutritional yeast for creaminess. Adjust seasoning and serve hot.
Tips
Feel free to adjust the spices to your taste or add a splash of lemon juice for brightness.
