Ingredients

2 servings
  • 1medium, chopped Onion
  • 4cloves, minced Garlic
  • 1 tbspButter
  • 1can, Kidney beans
  • 8mini or 4 medium, diced Yellow potato
  • 1handful, chopped spinach
  • 1 tspCumin powder
  • 1/2 tspTurmeric powder
  • 1 tspCoriander powder
  • 1 tspGaram masala
  • 1/2 tspChili powder
  • 2 tbspNutritional yeast
  • 250 mlWater or vegetable broth
  • to taste Salt

Steps

  1. 1

    Sauté onions and garlic in butter until soft.

  2. 2

    Add cumin, turmeric, coriander, garam masala, and chili powder. Stir for 1 min.

  3. 3

    Add potatoes and let it cook for 3-4 mins. Add Kidney beans, and leafy greens afterwards. Mix well.

  4. 4

    Pour in water or vegetable broth, add salt, and simmer until vegetables are tender.

  5. 5

    Stir in nutritional yeast for creaminess. Adjust seasoning and serve hot.

Tips

Feel free to adjust the spices to your taste or add a splash of lemon juice for brightness.
