Day 11: For these hot days, here's something tasty and refreshing using classic ingredients, but with a fun twist.

Ideally, have the vegetables already boiled and chilled in the refrigerator so they're fresh. Slice the beets, and use small cookie cutters to make fun shapes. Dice any leftover beet pieces into small cubes.

Place all the chopped beets on the plate as a base for the salad. Layer the sliced carrots on top to cover the beets, then add the tomatoes cut into petal shapes. Finish by arranging the beet shapes, like little trees and stars, in a circle on top.

Drizzle with olive oil and sprinkle with oregano. If you like, serve with a piece of fish.
