Ingredients

  • 6 cupsself rasing flour
  • 2 tspBaking powder
  • 1/2 tspSalt
  • 1 cupSugar
  • 500 gsalted (softened) Butter
  • 2Eggs
  • 1 cupButtermilk/1Cup plain yogurt
  • 1 tspVanilla extract

Steps

    Preheat oven to 180°C (350°F). Grease two baking trays.

  2. 2

    Mix flour, baking powder, salt, and sugar in a bowl.

  3. 3

    Rub in butter until mixture resembles breadcrumbs.

  4. 4

    Beat eggs, then mix with buttermilk and vanilla.

  5. 5

    Combine wet and dry ingredients to form a dough.

  6. 6

    Press dough into trays and smooth the top.

  7. 7

    Bake for 1 hr 00until golden.

  8. 8

    Cool, then cut into fingers.

  9. 9

    Dry rusks in a low oven (100°C/210°F) for 2 hours until crisp.

Tips

For extra flavor, consider adding nuts or dried fruit to the dough.
