Healthy but Tasty Lasagne

Packed with vegetables, so easy and quick to make. You can add even more veg. I’ve done courgettes, mushrooms, carrots, spinach etc. Probably our favourite recipe ever. Swap the beef with green lentils (and vegan creme fraiche & cheese) if you’re veggie/vegan!
Healthy but Tasty Lasagne

Mix crème fraîche, 30g cheese, hot water, and nutmeg in a bowl for béchamel. Set aside.

Heat olive oil in a pan, cook red onion for 5 min, add garlic, cook 5 min more.

Add minced beef, cook until browned.

Add red pepper, tomato puree, oregano, basil, and chopped tomatoes. Cook 10 min.

Preheat oven to 200°C.

Add sweetcorn, cook 5 min, then remove from heat.

Layer lasagne sheets, meat sauce, repeat, finish with sheets, then béchamel, and extra cheese.

Bake 20-30 min until golden and bubbling.
