Packed with vegetables, so easy and quick to make. You can add even more veg. I’ve done courgettes, mushrooms, carrots, spinach etc. Probably our favourite recipe ever. Swap the beef with green lentils (and vegan creme fraiche & cheese) if you’re veggie/vegan!

Ingredients

4 servings
  1. Cheat bechamel sauce
  2. 250 gCrème fraîche
  3. 30g, plus extra for topping Cheese (grated)
  4. 4 tbspHot water
  5. 1large pinch Nutmeg
  6. Tomato sauce
  7. 1 tbspOlive oil
  8. 1Red onion (diced)
  9. 1-2Garlic cloves (chopped)
  10. 1Red pepper (chopped)
  11. 1 tbspTomato puree
  12. 1 tspOregano
  13. 1 tspBasil
  14. 400 gChopped tomatoes (canned)
  15. 500 gMinced beef
  16. 200 gSweetcorn (canned, drained)
  17. 9-10Dried lasagne sheets

Steps

45 minutes
  1. 1

    Mix crème fraîche, 30g cheese, hot water, and nutmeg in a bowl for béchamel. Set aside.

  2. 2

    Heat olive oil in a pan, cook red onion for 5 min, add garlic, cook 5 min more.

  3. 3

    Add minced beef, cook until browned.

  4. 4

    Add red pepper, tomato puree, oregano, basil, and chopped tomatoes. Cook 10 min.

  5. 5

    Preheat oven to 200°C.

  6. 6

    Add sweetcorn, cook 5 min, then remove from heat.

  7. 7

    Layer lasagne sheets, meat sauce, repeat, finish with sheets, then béchamel, and extra cheese.

  8. 8

    Bake 20-30 min until golden and bubbling.
