
Aunt Shell's Famous Potato Salad

I usually will not eat potato salad because it has eggs in it. But I saw this on the news one morning, when I was up way too early and couldn't sleep. I decided that it wouldn't taste like other people's potato salad, so I thought I'd try it. It's been a hit at family gatherings ever since. I have tinkered with it a bit, and added a pinch of this and a dash of that. It is also really good with pepper bacon. And, it's actually better the second day, when all the flavors have come together.

Boil potatoes until fork tender.

Cook bacon thoroughly and drain on paper towels.

Remove and throw away thick ends of green onions and slice what is left into small pieces.

When potatoes are cool cut them into chunks.

Mix all ingredients together in large bowl, being careful not to smash the potatoes.

Refrigerate for as long as possible.
