An easy and quick recipe for delicious, homemade candies with honey, cinnamon and lemon.
They melt in your mouth, ideal for sudden cravings and for sore throat. Ideal for the fasting period.
They can also be made without sugar.
A silicone mold for chocolates (ideally with cases without corners) is required.

Ingredients

5-12 minutes + 10-15 minutes to harden
7-15 candies, depending on the size
  • 4teaspoons honey. If you don't have enough, adjust the amounts of the other ingredients accordingly. If the honey is crystallized, it can still be used
  • 1teaspoon water
  • 2teaspoons powdered/icing sugar (optional, for hard candies)
  • A little cold water in a small bowl (not from the fridge necessarily)
  • Optional for better taste and for sore throat/cough
  • 2teaspoons lemon juice, freshly squeezed (1 tsp if not adding sugar)
  • 1/2teaspoon cinnamon

Steps

5-12 minutes + 10-15 minutes to harden
  1. 1

    If you have an electric stove, turn on the small burner to about medium heat, for preheating.

  2. 2

    Take a coffee pot or a small saucepan, depending on the quantity you want to make.
    Pour in the honey and water and sift the sugar (if added) with a sieve or a small fine mesh strainer.
    Add cinnamon and lemon juice.

    Light the burner on low heat. If you have an electric stove, lower the burner you turned on before.

    Boil until the mixture begins to foam, stirring constantly with a spoon to prevent it from burning.
    CAUTION: If the heat is too high, the room is warm, or you are making a small amount, the mixture will foam more quickly, so set the heat as low as possible. If the room is cold, or if you are making more candies, it will take longer, so increase the heat slightly, until the mixture foams.

    Once the mixture starts to foam, set the heat as low as possible, so the honey won't burn and keep stirring.
    After 1-2 minutes, pour a few drops of the mixture into the bowl of cold water.

    If the piece of candy that forms is hard and does not stick to the bowl, then the mixture is ready, otherwise keep striring for about 2 minutes and test again.
    To make sure the candies will be as you want, you can also taste the piece of candy. The final candies will be slightly harder and less sticky.

    As you get closer to the end, the mixture will start to become slightly creamy. In any case, check more and more often, so that the honey won't burn.
    To make sure the candies won't become bitter or if you can't lower the heat enough, you can raise the pot in the air, above the heat, while stirring (the required time might be increased).

    Once the piece of candy in the cold water is as it should be, remove it from the heat. If the mixture starts to smell bad the candies will be more bitter.

    When the mixture is ready, stir it to stop foaming without becoming hard, and carefully pour as much as you want into the silicone mold's holes, depending on the size you want the candies to be.

    Let them cool for at least 10 minutes, in a cool place or on the windowsill, until they become hard. If the weather is too hot, put them in the refrigerator for ONLY 5 minutes.

    The candies are kept out of the fridge, in a cool place. They may become sticky on their surface after a while, but you can eat them without worries.
    Since they are sticky, leave them in the mold until you eat them, or wrap each one of them in parchment paper.
    To make wrapping easier, crumple the piece in your hands and then straighten it out and wrap the candies.

    Whenever you want, unmold/unwrap and enjoy.
    They are unbitable because they are hard and sticky, but they melt nicely in the mouth.

    If the candies have not set well (they're too sticky when eating them), you can melt them in the pot with very little water (just enough to cover the bottom), on very low heat (raise the pot in the air if necessary).
    Stir constantly and then repeat the process from step 5, with more frequent tests in the cold water.
    Do not stop stirring, otherwise the honey will burn very easily.
    At first they may smell bad, but once they melt completely, the bad smell will go away.

Tips

To make sure you always make them perfect (especially if you don't have a gas stove), when trying for the first time, add 1 tsp. of water and adjust the amounts of the remaining ingredients. Then follow the same steps. If the candies don't set properly or become bitter, try with a higher or lower heat next time (raise the pot in the air if necessary). Keep testing until you learn to make them perfect, depending on your own kitchen.
