Sweet potato pudding

This is a Jamaican side that I absolutely love! The amazing flavors can go well with just about anything at all or just as a quick afternoon snack.
Sweet potato pudding
This is a Jamaican side that I absolutely love! The amazing flavors can go well with just about anything at all or just as a quick afternoon snack.
Steps
- 1
I decided to only use the 2 bigger ones. Wash, peel and cut into pieces that will fit into a food processor. Process until very small pieces. Put pieces into a bowl.
- 2
Add the sugar and all the spices.
- 3
Add the milk 🥛
- 4
I used some carrots for color since my sweet potatoes are white. You can omit if you're using colored sweet potatoes. Grind carrots after cleaning and peeling and add to the mix.
- 5
- 6
Add the vanilla and coconut milk. I used fresh.

Get a baking dish and grease with butter then lightly flour. Preheat oven to 350f - 175c pour mixture into baking dish. Be sure the liquid come just a little bit over but can still see the bits of potatoes. Place in the oven covered with foil but make sure the foil doesn’t touch the top. Depending on your oven bake for 45 minutes and check to see if the edges are browning. Shake the side to see if there’s any jiggling in the center. Add for 15 minutes if still to wet.

Take out of the oven check to see if the mixture is totally set. If so you are finished. Let this cool down to room temperature. Cut into squares and enjoy. It’s also very good after being chilled in the refrigerator.
Tips
Feel free to add nuts, raisins or even shredded coconut 🥥 Enjoy 😊
