Ingredients

Makes 2 cakes
  • 2 cupswhole wheat flour (about 240 grams)
  • 1 cupjaggery powder (about 150 grams)
  • 1/4 cupcocoa powder (about 25 grams)
  • 2 teaspoonsbaking powder
  • 1 teaspoonbaking soda
  • 1 teaspoonground cinnamon
  • 1 teaspoonground ginger
  • 1 teaspoonground cardamom
  • 1/4 teaspoonsalt
  • 1 cupboiling water (about 240 ml)
  • 1 tablespoonmixed seeds (such as pumpkin, sunflower, flaxseed, etc.)
  • 1/4 cupcandied fruit (tutti frutti) (about 40 grams)
  • 1/4 cupdried fruits (such as raisins, plums, kiwi, cranberries, etc.) (about 40 grams)
  • 1/4 cupchopped mixed nuts (such as almonds, walnuts, cashews, pistachios) (about 30 grams)
  • 1 tablespoonvinegar
  • 1 teaspoonvanilla extract

Steps

    Soak all the nuts, candied fruit, seeds, and dried fruits in the boiling water for 15 minutes. Add the jaggery powder, oil, and vanilla extract, and mix well.

    Meanwhile, add salt to a large heavy-bottomed pot, cover, and preheat it on the stove. If using an oven, preheat to 350°F (180°C) for 10 minutes.

    In a separate bowl, sift together the whole wheat flour, cocoa powder, baking powder, baking soda, cinnamon, ginger, cardamom, and salt.

    Add the dry ingredients to the wet mixture. Finally, add the vinegar, gently mix, and immediately pour the batter into a greased cake pan. (If the batter seems too thick, add a little more warm water.)

    Sprinkle some extra nuts, dried fruits, and candied fruit on top. Place the cake pan in the preheated pot, cover, and bake on low heat for 40–45 minutes.

    Check with a toothpick. Once cooled, remove the cake from the pan.
