Cake batter In a bowl mash the bananas. Add curd, milk, oil, vanilla extract. Molasses/sugar And vinegar. Whisk them together. Place the dry ingredients –oats and walnut flours, baking soda, baking powder. Salt, cocoa powder in a bowl whisk to combine. Take one half of the dry mixture in a sieves. Place the sieve over the bowl with wet mixture, Sieve Using a spatula mix them together.

Now take 1c blue berres and coat them with ½ c dry mixture; add this to the mixture in the bowl and fold the berries and the dates in the cake mixture in the bowl. Now sieve the rest of the dry mixture into the bowl. Mix with the spatula. If too thick add ½ c almond milk little by little and mix. (Now Cake batter should be soft, smooth and silky). The cake batter is ready to pour into the cake pan.

I used a spring form cake pan. Then, prepare the cake pan. Pour a tablespoon of oil and grease the bottom and the side of the pan with your fingers. Line it with parchment paper to prevent the batter from flowing Pour the batter into it. Tap the pan on the table. Spread the flour evenly on top and let the batter rest for 20-30 minutes. Top the batter with unsweetened chocolate chips.

Bake in the pre heated oven in the middle rake. About 30 t0 40 minutes. Use the wooden skewer to check the cake is completely baked. Insert the skewerinto the cke and take out. If it comes out clean cake is baked good.
Remove from the oven and let it cool. You can unmold it now. Frosting is optional. If you do not want to frost, you can slice and enjoy the cake - 9
Frosting with cashew cream. • Soak raw cashews in 3c hot water with a pinch of salt for 1 hour at room temperature water or overnight in a refrigerator. Drain and Rinse then add to a high-speed blender.
Add the remaining ingredients and blend on high until smooth and silky. Taste and adjust the amount of apple cider vinegar for preferred tanginess and maple syrup for preferred sweetness. Transfer to a bowl. - 10
The frosting will harden after refrigerating if you prefer icing that can hold its form. On the other hand, if you want softer more fluffy frosting, you can whip it with a hand mixer. I refrigerated. Spread the cream on the cake top. Decorate with blue berries. Slice, share and celebrate. Happy New Year
