Ingredients

  1. Chana–Potato Stuffing :-
  2. 1 cup(soaked overnight) Chickpeas(chana)
  3. 3medium (boiled) Potetoes
  4. Salt – to taste
  5. 1 tspChat masala
  6. 1/2 tspDry Mango powder (amchur)
  7. 1 tsppani Puri masala
  8. 1/2 tspred chilli powder
  9. 2 tbspCoriander–mint paste (before adding water)
  10. Mint Pani :-
  11. 2 cups(packed) mint leaves
  12. 1 cup(packed) fresh coriander leaves
  13. 7–8 green chillies
  14. 1 inchginger
  15. 1/3 cuptamarind pulp
  16. 2 tbspjaggery
  17. Pani puri masala – to taste
  18. Water – as required
  19. Ice cubes few
  20. Dates–Tamarind Chutney :-
  21. 250 gseedless dates
  22. 75 gtamarind
  23. 750 gjaggery
  24. 1 tbspKashmiri red chilli powder
  25. 1 tbspcumin powder
  26. 1 tspblack salt
  27. 1/2 tspdry ginger powder
  28. Salt – to taste
  29. 1 litrewater
  30. For Serving :-
  31. Ready-made puris
  32. Chana–potato stuffing
  33. Soaked boondi
  34. Dates–tamarind chutney
  35. Mint pani
  36. Pani Puri masala(ready made)

Steps

    Stuffing :-

    Soak chickpeas overnight. In the morning, wash well and pressure cook with salt until soft.
    Boil potatoes, peel and mash lightly.

  3. 3

    Take boiled chickpeas and potatoes in a wide bowl.
    Add salt, chaat masala, amchur powder, pani puri masala, coriander–mint paste, and red chilli powder.
    Mix everything well. Stuffing is ready.

    Mint Pani :-

    Blend mint leaves, coriander, green chillies, ginger, tamarind pulp, and jaggery with little water.
    Strain the mixture.
    Add pani puri masala, water, and ice cubes.
    Mix well and keep chilled.

    Dates–Tamarind Chutney :-

    Boil dates and tamarind with water until soft.
    Mash and strain the pulp.
    Add jaggery and all spices.
    Cook till slightly thick. Cool completely before use.

    Assembling Pani Puri :-

    Make a small hole in each puri.
    Fill with chana–potato stuffing and soaked boondi.
    Add dates–tamarind chutney.
    Pour chilled mint pani and serve immediately.

Tips

∆ Always serve mint pani chilled for best taste
