Wash poha and soak for a few minutes until soft. Drain and squeeze out excess water.

Heat sunflower oil in a pan. Add mustard seeds, cumin seeds, and asafoetida.

When mustard seeds splutter, add raw peanuts. Fry until dark brown and the peel comes off.

Add curry leaves, chopped onions, green chillies, and ginger. Stir fry until onions are well cooked.

Add turmeric and salt. Mix well.

Add the drained poha. Mix gently to combine.

Garnish with lemon juice or coriander leaves before serving.
Tips
Using medium-sized onions and frying the peanuts until dark brown enhances the flavor.
