Preheat oven to 350°F. Grease an 8×4-inch loaf pan.

Mash bananas with a fork.

In a bowl, mix mashed bananas, mayonnaise, and egg.

In another bowl, combine flour, sugar, baking soda, salt, and pecans unless you want to use pecans as crust on bottom or top.

Add wet ingredients to dry. Stir until just combined; do not overmix.

Pour batter into loaf pan. Bake 60–70 minutes, until a toothpick comes out clean.

Remove from pan and cool on a wire rack before slicing.
