Ingredients

1 loaf
  1. 1 cup(about 3 medium) Bananas (mashed)
  2. 0.5 cupMayonnaise or dressing
  3. 1Egg (room temperature)
  4. 1.5 cupsAll-purpose flour
  5. 0.75 cupGranulated sugar
  6. 1 teaspoonBaking soda
  7. 0.5 teaspoonSalt
  8. 0.5 cupChopped pecans (optional but we made a nice base crust by sprinkling on the bottom of the pan then adding mix)

Steps

    Preheat oven to 350°F. Grease an 8×4-inch loaf pan.

  2. 2

    Mash bananas with a fork.

  3. 3

    In a bowl, mix mashed bananas, mayonnaise, and egg.

  4. 4

    In another bowl, combine flour, sugar, baking soda, salt, and pecans unless you want to use pecans as crust on bottom or top.

  5. 5

    Add wet ingredients to dry. Stir until just combined; do not overmix.

  6. 6

    Pour batter into loaf pan. Bake 60–70 minutes, until a toothpick comes out clean.

  7. 7

    Remove from pan and cool on a wire rack before slicing.
