Optional: For garnish, set aside a few small cauliflower florets.

In a large pot, sauté the onion in olive oil, then add the garlic purée.

Add the cauliflower and stir. Add enough water to just cover the vegetables (about 4 to 5 cups, or 1 to 1.2 liters). Cover and simmer gently for 20 minutes.

Blend the soup using a blender or immersion blender. Adjust seasoning with salt and pepper.

To serve, add a splash of cream (dairy or soy) to each bowl.

Top with crispy croutons and the reserved raw cauliflower florets.
