To keep soup fresh in the fridge for up to 4 days without it spoiling, simply avoid adding any dairy or plant-based cream and store it in an airtight container.   • 1 1/2 lbscauliflower (about 680 grams)
  • 1/2 cupchopped onion (about 60 grams)
  • 1/2 teaspoongarlic purée (about 2 grams)
  • Salt & pepper, to taste
  • Cream (soy or regular, 12% fat), to taste

    Optional: For garnish, set aside a few small cauliflower florets.

    In a large pot, sauté the onion in olive oil, then add the garlic purée.

    Add the cauliflower and stir. Add enough water to just cover the vegetables (about 4 to 5 cups, or 1 to 1.2 liters). Cover and simmer gently for 20 minutes.

    Blend the soup using a blender or immersion blender. Adjust seasoning with salt and pepper.

    To serve, add a splash of cream (dairy or soy) to each bowl.
