Ingredients

4 servings
  • 4 pieces(about 120g each) Salmon fillets
  • 1 tbspOlive oil
  • 2cloves, minced Garlic
  • 1 cupSweet chili sauce
  • 2 tablespoonsSambal oelek
  • 2 tablespoonsDijon mustard
  • 2 tablespoonsSoy sauce
  • 1 cup(uncooked) Jasmine rice
  • 1 bunchChinese broccoli
  • 1cucumber, thinly sliced and lightly pickled
  • 2, chopped Scallions
  • 1 tspSesame seeds

Steps

    Grill salmon skin-side down until skin is charred, then flip and cook until reddish brown.

  2. 2

    Steam Chinese broccoli until just tender, set aside.

  3. 3

    Cook jasmine rice according to package instructions.

  4. 4

    Sauté garlic in olive oil for 1 min, add sweet chili sauce, sambal oelek, Dijon mustard, and soy sauce. Simmer until slightly thickened.

  5. 5

    Arrange rice, Chinese broccoli, pickled cucumber, and grilled salmon neatly in a bowl.

  6. 6

    Spoon sauce over salmon, garnish with scallions and sesame seeds.

Tips

For best results, ensure the salmon skin is crispy and the sauce is slightly thickened before serving.
