Take a watermelon cut and take out the pulp.Then peel off the skin cut the rind into small pieces.

Keep a fry pan on medium heat add oil, mustard seeds,red chilli powder, turmeric powder, amchoor powder mix it, add the chopped watermelon rind pieces. Saute for few minutes. Add salt and some water.

Close it with lid. Cook till it becomes soft.Open the lid, mix well. Add grated coconut and curry leaves, saute for two minutes. Subji is ready to serve.

Transfer to a serving bowl. Enjoy the tasty and spicy watermelon rind subji with steamed rice, chapathi and roti.
