Slice the horse meat thinly into bite-sized pieces. Cut the garlic scapes.

Add 1 tablespoon salt, 1 tablespoon MSG, 1 tablespoon fish sauce, and 1 tablespoon soy sauce (use what you have on hand). Mix well.

Heat oil in a pan, then stir-fry the meat until it firms up. Add a little water to keep the meat from drying out, then add the garlic scapes and stir well.

Transfer to a bowl and enjoy. (This horse meat tastes better when stir-fried until just cooked rather than overcooked, as it can get tough if cooked too long.)
