Heat mustard oil in a pressure cooker, add cumin seeds and let them crackle.

Add sliced onions and sauté until light brown.

Add soaked soya beans, sauté for 2 minutes.

Add potatoes and tomatoes, mix well.

Add cumin powder, coriander powder, turmeric, ginger, garlic, salt, and water. Stir well.

Close the lid and cook for 5 whistles on medium flame, then 3 whistles on low flame.

Let the pressure release naturally, open the lid, and garnish with fresh coriander leaves.

Serve hot.
Tips
Soaking the soya beans for 3-4 hours enhances their texture and reduces cooking time.
