Ingredients

1 taco
  1. 180 gBeef mince (5% fat)
  2. 1Tortilla
  3. 1 tspOil
  4. 40g, grated or sliced Red Leicester cheese
  5. 1leaf, shredded Lettuce
  6. 1 tbspKetchup
  7. 1 tbspMayonnaise
  8. 1 tspMustard
  9. 1 tspSmoked paprika
  10. 1 tspGarlic powder
  11. 1, finely diced Gherkin

    Mix ketchup, mayonnaise, mustard, smoked paprika, garlic powder, and diced gherkin to make the sauce.

  2. 2

    Press all the beef mince into a thin layer (under 1cm) onto the tortilla.

  3. 3

    Heat oil in a pan over medium-high. Place tortilla beef-side down and cook for 3-4 mins.

  4. 4

    Flip tortilla, add Red Leicester on top of beef, cover pan, and melt cheese.

  5. 5

    Remove from pan, add shredded lettuce and sauce. Serve warm.

Tips

Using Red Leicester cheese enhances the flavor and ensures better melting.
