On vegetarian days, a simple plate of bánh hỏi like this is light and refreshing for breakfast. I’m not a strict vegetarian, so I still use garlic and onions in the ingredients.

On vegetarian days, a simple plate of bánh hỏi like this is light and refreshing for breakfast. I’m not a strict vegetarian, so I still use garlic and onions in the ingredients.

If using dried bánh hỏi noodles, soak them in boiling water for 5 minutes, then drain.

Finely chop the green onions and chives. Add a pinch of salt and a little MSG. Heat oil until hot, then pour it over the onions and chives in a bowl. This helps keep their green color better than frying them directly in a pan.

Place the bánh hỏi noodles on a plate. Top with the scallion oil and crushed roasted peanuts. Serve with fresh herbs and vegetarian fish sauce.

Quick vegetarian fish sauce: Caramelize a little sugar for color, add salt for saltiness, then mix in lime juice and sugar. Adjust to taste and add minced garlic and chili. For extra flavor, you can simmer with pineapple juice. For a quick version, just keep it simple as above.
