Cut the tofu skin into pieces. Cut the bell peppers and red onion into square chunks.

Thread the tofu skin, bell peppers, and red onion alternately onto bamboo skewers.

Mix the soy sauce, five-spice powder, and honey to make a sauce. Brush the sauce evenly over the skewers.

Preheat the air fryer to 356°F (180°C) for 5 minutes.

Arrange the skewers in the air fryer basket. Cook at 356°F (180°C) for 10 minutes, then flip the skewers, brush with more sauce, and cook for another 5 minutes.

Transfer to a plate and garnish with lettuce and mint.
