For Roasting Sesame Seeds:
Dry roast 2 tbsp sesame seeds in a pan on low heat until golden and fragrant (about 3-4 minutes). Keep aside. Let them cool completely.
Grind them into a fine paste using a small blender. You can add 1–2 tsp of water or oil if needed to help blend. - 2
Prepare the Chicken:
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Stir in ginger-garlic paste and sauté until fragrant.Cook the Masala:
Add turmeric, red chili, and coriander powder. Mix well.
Add tomato puree and cook until the oil starts separating from the masala.
Add the bone-in chicken pieces to the pan. Cook for 5–7 minutes, stirring gently so the masala coats the chicken - 3
Add Sesame Paste & Yogurt:
Stir in the ground sesame seed paste and whisked yogurt. Mix gently.
Add water if the gravy is too thick. Simmer:
Cover and simmer on low heat for 25–30 minutes, stirring occasionally. The chicken should cook through and absorb all the flavors.Finish & Garnish:
Add garam masala and salt to taste. Mix gently.
Garnish with fresh coriander leaves and toasted sesame seeds if desire.
Serve hot with naan, roti, or steamed rice.
Tips
Toast the sesame seeds carefully on low heat until golden brown—this brings out their nutty aroma and adds depth to the gravy. Avoid burning them, as burnt sesame seeds can make the dish bitter. Also, grind them to a fine paste just before adding to the curry for the richest flavor and smoothest texture.
