Crustless Spinach Quiche in the Air Fryer
A lovely recipe to explore the possibilities of a new kitchen tool for me. The oats on top absorbed the extra moisture and added extra flavor!

Sauté the vegetables in olive oil with the seasonings until softened, then remove from heat.

Grate or finely chop the cheese and add it to the egg mixture.

Preheat the air fryer to 300°F (150°C) for 5 minutes.

Meanwhile, mix the sautéed vegetables with the flour on the still-warm burner until the liquid is absorbed.

Pour half of the egg mixture into the pan, then add the filling on top. Add the remaining egg mixture and stir gently.

Spread the oats on top and drizzle with the evaporated milk and olive oil.

Place in the air fryer at 300°F (150°C) for 20 minutes. Then increase to 355°F (180°C) for another 10 minutes, until set and golden brown.

Let the pan cool before removing. Enjoy!
