Ingredients

45 minutes (including soaking & infusion time)
Serves: 500 ml (2 Large Glasses)
  • For Sugar-Free Thandai Premix (Small Batch):(No sugar added)
  • 10Almonds
  • 8Cashews
  • 8Pistachios
  • 1 tbspMelon seeds (magaz)
  • 1 tspPoppy seeds (khus khus)
  • 1 tspFennel seeds (saunf)
  • 8Black peppercorns
  • 6Green cardamom pods
  • Generous pinch Saffron (optional)
  • 1 tbspDry rose petals (optional)
  • Tiny pinch Nutmeg powder
  • For Date Paste:
  • 20deseeded Royal Crown dates
  • 1 cupWarm water
  • For Kesar Milk:
  • 500 mlFull-fat milk
  • Generous pinch saffron
  • To Prepare Royal Kesariya Date Thandai:
  • 500 mlsaffron milk
  • 4 tbspthandai premix
  • 4 tbspdate paste (adjust to taste)
  • For Garnish:
  • Few dry rose petals
  • Pinchsaffron
  • Chopped nuts (optional)

Steps

45 minutes (including soaking & infusion time)
  1. 1

    1️⃣ Sugar-Free Thandai Premix:

    ▪︎ Dry roast melon seeds, poppy seeds, fennel & pepper until aromatic. Cool.
    ▪︎ Soak almonds 10 mins in hot water, peel.
    ▪︎ Grind everything into a fine powder.
    ▪︎ Store airtight.

    2️⃣ Date Paste:

    ▪︎ Soak dates in warm (not boiling) water 20–30 mins.
    ▪︎ Blend to smooth paste.
    ▪︎ Add little soaking water if needed.
    ▪︎ Refrigerate (keeps 4–5 days).

    3️⃣ Saffron Milk:

    ▪︎ Add saffron to hot boiled milk.
    ▪︎ Cover & infuse 20–30 mins.
    ▪︎ Let cool completely.

    ▪︎ Strain for silky texture.
    ▪︎ Chill 1–2 hours.
