Peel and blend beetroot into a smooth paste.

Mix beetroot paste, ghee, and salt with atta. Knead into a dough and rest for 25–30 minutes.

Finely chop raisins and dates. Roughly grind almonds and cashews.

Heat a pan, roast semolina until lightly brown. Add all dry fruits and fry for 1 minute on low flame.

Roll out the dough into a large roti. Cut small rounds using a glass or bowl.

Place filling on each round, fold and shape into gujiya dumplings.

Heat oil on medium flame. Fry gujiya on both sides over low flame until golden.

Serve warm.
