Sauté shallot, leeks, garlic and salt with olive oil and butter til slightly browned. do this on the sauté setting of the IP. Your kitchen is going to smell amazing during this step.

Toss in “everything else” including the herb pouch. I add a little more salt maybe a teaspoon. But you will have to add more salt at the end to your liking.

Cook on high pressure for 8 minutes. I did natural release. Remember to remove herb pouch before the next step.

After it has cooled a little, blend with a blender or immersion blender.

Salt to taste and drizzle with olive oil!
Tips
Don’t oversalt during the instant pot phase. Add salt to taste after everything has cooked.
Some online recipes add heavy cream but I don’t think you need it at all!
