Preheat your oven to 375°F (190°C).

Gather your ingredients.

Grease and flour a 9-inch (22 cm) cake pan.

In a large bowl, beat the eggs with the sugar until the mixture lightens in color.

Add the mascarpone and beat again until smooth. Pour in the oil and mix again.

Add the flour, baking powder, salt, and shredded coconut all at once. Mix just until you no longer see any dry flour. You can add the vanilla sugar if you like.

Pour the batter into the prepared pan, smooth the top, and bake for 30 to 40 minutes, until a knife inserted in the center comes out clean.

Let the cake cool slightly, then remove it from the pan onto a cake plate. Serve as is, or simply dust with shredded coconut or powdered sugar.
