Potato & egg salad

This is a typical Japanese potato salad, and I like to make mine with a lot of eggs. I usually make a big bowl of these for dinner, and have the leftover ones for sandwich the next morning.

This is a typical Japanese potato salad, and I like to make mine with a lot of eggs. I usually make a big bowl of these for dinner, and have the leftover ones for sandwich the next morning.

Peel the potato skin and cut them into 1/4pieces. Boil the potatoes in a pot till it's soft enough to mash it. (10-15 minutes)

Make boiled eggs in another pot and remove the shell.

Mash both potatoes and eggs in a bowl, with a fork. Leave some lumps for texture.

Mix sliced onions and other optional vegetables into the bowl.

Add mayonnaise and vinegar. Season with salt and pepper to taste. Enjoy!!
