In a pot with oil, sear the chicken breast and set aside.

In the same pot, cook the onion and carrot.

Add the bell pepper and cook for about 3 minutes.

Add the tomato and cook for another 3 minutes.

Season with salt, pepper, and your preferred spices. Return the chicken to the pot and cook for 3 minutes.

Add 6 1/3 to 8 1/2 cups water (1.5 to 2 liters) and stir. Add the chicken bouillon cube and stir.

In a bowl, combine the cornmeal and grated cheese. Add some broth from the pot and mix to form bite-sized balls.

Add the balls to the pot and boil for about 8 minutes. The balls will start to float.

Serve with parsley or cilantro.
