This is one of the savory dipping sauce for your grilled or fried meat,Thai style omelet or even mix with the cooked rice is heavenly yummy. "Nam Pla Prik" is what Thai people's been called.I add some oyster mushroom to give an extra protein.You can use any type of mushroom you like but I recommend button mushrooms or champion mushrooms if you can't find oyster mushroom in your country.

Wash and clean the mushrooms and bring them to parboil about 2-3 minutes.Then put them in cold water and set aside.

Coarsely chopped the mushrooms and put them in the bowl along with the chopped chili peppers and shallots.

Dissolve the sugar with the fish sauce and lime juice until the sugar is melt.Pour it to the mushrooms mixture bowl and toss them lightly to combine.Now it's ready to serve.
