Golden and Fluffy Omelette Golden and Fluffy Omelette
I have been making this from the time I lived alone. The shiro dashi doesn't discolour the egg (like light soy sauce), and the egg remains golden. I uploaded this recipe at last. It's moist to the shiro dashi, and the golden colour remains. The mayonnaise keeps it fluffy.Don't forget the umami seasoning and the water. Thai Omelette with Ramps (Ramp Kai Jiao) Thai Omelette with Ramps (Ramp Kai Jiao)
If you’re new to ramps, they’re a wild allium related to garlic, scallions, and leeks, and they’ve got a strong garlicky-onion flavor. Kai Jiao (Thai omelette) is the perfect canvas to let them shine. Ramps are native to the northeastern U.S. and only around for a short window, so if you spot them, this is a delicious way to put them to use. Kasey Coffey
