1. Prepare the ingredients
Wash the spinach thoroughly and drain well. If needed, slice the ham into strips. - 2
Sauté the garlic and ham
Heat the olive oil in a skillet. Add the minced garlic. Then add the ham and sauté for 2–3 minutes.
Add the spinach
Add the spinach and cook until it wilts and reduces in size (about 3–5 minutes). - 3
Add the raisins for a sweet contrast to the ham.
Add the eggs
Crack the eggs directly into the skillet. Gently stir to scramble, or leave them whole for baked-style eggs. - 4
Season and serve
Adjust salt and pepper to taste and serve hot.
