Thawing the vegetables: * In a microwave-safe glass bowl, place the red onion, leeks, olive oil, and a pinch of salt.

Cover the pot (with a lid or plate) and cook for 2 minutes. This step causes the onions to release their natural sugars and become soft.

Crunch and flavor stage:
Add the bell peppers to the pot. Peppers cook faster, so we add them in the second stage to preserve their crunch. - 4
Cook for 1 additional minute

Add peanut butter, paprika, and chili pepper.

Stir the ingredients well until the vegetables are completely coated and the butter turns into a creamy sauce.

Place the bowl in the microwave for only the last 30-45 seconds to heat the sauce and blend the flavors.

Remove the dish and stir it again. If the consistency is too thick, add a few drops of hot water.
