Ingredients

  1. 1 PackVeal Osso Bucco bones
  2. 1/2Large Onion - Cut into large chunks
  3. 1Large Carrot - peeled and cut into Chunks
  4. 1 Stalkcelery (Options) Diced - I don't use as I am allergic
  5. 2 TbspAP Flour
  6. 50 GrSalted Butter or 2 Tbsp olive Oil for Frying
  7. 500 MLChicken or Pork Stock
  8. 100 MlRed Wine
  9. 1Large Tin Chopped Tomatoes
  10. 1 TbspTomato Puree
  11. 3Bay Leaves
  12. 2 SpringsOf Rosemary
  13. 1 TspDried thyme
  14. 1 Handful- Chopped Parsley - To Serve
  15. Large Pinch of salt and Pepper - to taste
  16. 3Large Cloves Garlic
  17. Gremolata
  18. 2Large garlic cloves, minced
  19. 2 tsplemon zest
  20. Small Bunch of finely chopped flat-leaf Italian parsley

  1. 1

    Sprinkle the meat with salt and pepper - then dust with flour. Set pressure cooker to saute add butter or oil then brown the meat on all sides. I do in 2 batches. Remove the meat and add the onions. I put on lid for 1 min to make more water and so easier to scrape the bottom of pot of all those amazing brown bits. Then fry onion until start to brown about 5 mins. Add garlic cook 1 more min.

    Add wine and chicken stock cook 3 mins then add tomatoes again 3 mins. Then add back in the meat and herbs - push the meat gently so covered in sauce. Add the lid and pressure cook on high for 25 - 30 mins if large pcs. (You can also put into a casserole and bake for 3 hours until falls of the bone at 170c). Allow normal pressure release for 10-15 mins.

    If still too much sauce carefully remove meat and saute again until sauce reduced. Spoon over the meat then sprinkle with Gremolata (just chop all together) and serve - WOWWEEEEEEEE

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
