Scotch Eggs (Air Fryer)
A classic favourite, tastes better when it’s warm with a runny egg.
Steps

Boil 4 eggs in a saucepan. If using eggs from the fridge, boil them in boiling water for 5-6 minutes - for soft boiled eggs.

Once the eggs are done, take them out and put them in cold water. Peel and leave in cold water while you prep the sausage meat.

Remove the sausages from the casing (if using a pack of sausages) and put the meat in a mixing bowl.

Mix the meat together. If using seasonings, add them in and mix.

Divide the sausage meat into 4 balls.

Wrap the sausage around each of the peeled eggs until the egg is fully covered.

Coat each sausage-covered egg with flour, then dip in beaten egg, and roll in breadcrumbs. Dip in the egg and breadcrumb again.

Preheat the air fryer.

Spray the scotch eggs generously with cooking spray.

Place the scotch eggs in the preheated air fryer and cook at 180c for 15 minutes. Make sure to flip the eggs half way through cooking.
Tips
Serve with side salad and sweet chilli sauce.
Sausage meat can be seasoned however you like, we’ve added black pudding to it before.
