Steps

First stage (smooth mashing): place (dates, melted butter, egg, brown sugar, and vanilla) in a blender and blend until the dates are completely blended and the mixture becomes liquid and creamy.

Phase 2 (adding the dryness): add (oats, coconut flour, and baking powder) and mix with short bursts (pulse) only until the flour disappears.

Leave the dough in the mixing bowl for 5 to 10 minutes before shaping. You'll notice it has firmed up and become easier to shape by hand.

Spread them on a baking tray and bake in the oven at 180-200 degrees until they puff up and brown. Let them cool before serving. Enjoy!
