A snack or main dish to enjoy with rice. This easy, straightforward recipe is popular with both Thais and foreigners. Most importantly, it's highly nutritious.

Toss the chicken cubes with a little ground black pepper and soy sauce. Coat with all-purpose flour, adding a little water to help the flour stick.

Heat a pan and add the chicken. Fry until golden brown, then pour out the excess oil, leaving the chicken in the pan.

Add the dried red chilies and stir-fry over low heat until fragrant (be careful not to burn them). Add a little water, then season with soy sauce, sugar, seasoning powder, and black pepper. Stir to combine.

Add the diced bell peppers and onion. Stir-fry briefly (do not overcook). Before turning off the heat, add the scallions and cashew nuts, toss everything together, then remove from heat and transfer to a plate. Sprinkle with a little more black pepper and enjoy!
