Khichoo-Popular Gujarati Snack
A simple yet super yummy recipe

First, ready all the ingredients. Bring 2 cups of water to a rolling boil. Add in ajwain (rubbed in palms), jeera and salt. Add in coriander.

Add in chilled green chillies,1/2 tsp groundnut oil and papadiyo kharo (or soda bicarbonate). Mix.

Lower the gas flame and add in the rice flour in batches. Mix vigorously with a rolling pin for best results.

Continue stirring and adding the entire cup of rice flour. The mixture will begin to thicken. When it leaves the sides of the pan it's done. It takes only 2 minutes to reach this stage.

Grease a container with some oil. Add in the cooked rice flour mixture. Level it and drizzle little oil and spread all over the surface of the mixture.

Place this bowl in a steamer and cover lid. Give a good steam for 3-4 minutes. Open lid. The texture will now get glazy and lustrous.

Serve hot. I have served street style in a disposable container. Drizzle groundnut oil and sprinkle Achaar Masala. Serve with a smile to family and friends. Happy Cooking 😊!!
