First ready all the ingredients. Take besan rava citric acid and salt in mixer jar. Churn to make a powder.

Make a powder as fine as possible. Transfer the powder to a mixing bowl.

Whisk vigorously for 5 minutes. Cover and rest the batter for 30 minutes.

Now add soda and 1 tsp water on the soda and mix well. The batter gets bubbly.

Heat a tawa and spread the batter. Keep gas slow. When the top side is slightly dry, apply butter.

Now using a cup press the dosa to level it smoothly.

Using a moist spatula remove the excess batter and make a levelled thin dosa. Collect the scraped excess and consume it as it is. Spread butter again and roast on slow gas.

Rotate the tawa and roast evenly all over. Release the dosa from the tawa when crispy and golden crispy.

After releasing give cut mark impressions. Take the crispy dosa off the tawa onto a wire rack.

Cool completely. These can be stored for 10-15 days in an airtight container.

Can sprinkle masala of your choice and make pav bhaji,periperi, panipuri etc flavoured Dosa Khakhra.
