Handvo Premix
An easy way to make handvo
Steps

Wash rice and dals well. Drain and spread on a cloth for 1–2 hours to dry slightly.

Lightly dry roast fenugreek seeds.

Grind rice, dals, and fenugreek seeds to a slightly coarse flour.

Add sugar, chili powder, turmeric, salt, citric acid, peanuts, and baking soda. Mix well.

Store in an airtight container for up to 2 months.

To make Handvo, take 2 cups premix. Add yogurt and water to make a thick batter.

Add grated bottle gourd or mixed vegetables if desired. Rest 15–20 minutes.

Prepare tempering with oil, mustard seeds, sesame seeds, curry leaves, and green chilies.

Pour batter into a greased pan. Cook on stovetop or bake until golden and crisp.
Tips
Store the premix in an airtight container to keep it fresh.
