Chipotle Veggie Breakfast Sliders

Some of my favorite recipes come from opening the fridge and getting creative.
This breakfast started with soft Hawaiian rolls and turned into a sweet-and-smoky sandwich filled with scrambled eggs, fresh bell peppers, onion, garlic, a splash of Rosato balsamic vinegar, and chipotle mayo. The combination ended up being buttery, slightly tangy, a little spicy, and incredibly satisfying.
As someone who’s focused on building strength and fueling my workouts, I wanted a breakfast that wasn’t just delicious—it needed to work for me. Heat avocado oil in a skillet over medium heat. Sauté onion, peppers, and garlic until soft.

Add a splash of Rosato balsamic vinegar and cook for 1 minute.

In another pan, cook eggs gently, popping the yolk so it cooks through but stays tender.

Slice the connected rolls in half. Brush inside with melted butter and spread chipotle mayo.

Place cooked eggs on the rolls, top with sautéed veggies, and close the sandwich.

Serve warm. The heat from the filling will soften the bread. Enjoy with a fork!
Tips
Gently pop the yolk to ensure it cooks through without being runny, and let the hot filling warm the bread.
