Ingredients

2 servings
  • 2 medium (about 300g)Brinjal (eggplant)
  • 500 mlOil (for frying)
  • 1/2 tspSalt
  • 1/2 tspRed chilli powder
  • 1/2 tspCoriander-cumin powder
  • 1 tbsp (chopped, for garnish)Fresh coriander leaves

Steps

  1. 1

    Start by chopping washed brinjals into thick chips and soak in water for ten minutes.

    Heat oil and pat dry chips.

    Fry until golden and crisp.

    Sprinkle salt, chili powder, and coriander-cumin powder. Garnish with coriander leaves and serve.

Tips

For extra crispiness, ensure the brinjal chips are well-dried before frying.
