I love Tapas or anything I can dip my homemade breadinto and Wow is this a easy recipe and a great lunch or part of a tapas meal. Perfect.

Heat the wine in a pan with lid - then add the mussels and steam until they open around 3-5 minutes. Discard any that dont open and allow to cool. Then remove the meat from the shells into a bowl - I add the liquid as most has gone now.

In a small pan heat the oil and add the garlic and bay leaves. Cook on medium until the garlic just starts to brown. Remove from heat for 1 min Add the paprika and cayenne if using, stir then add the vinegar slowly.

Reheat the oil mix and cook off the vinegar for 2-3 mins. Add in the mussels. and coat. Then put into a dish with lid or jar. Allow to cool. Cover and then put into fridge for 2 days (Upto a week) then serve with toast or crisps to soak up those amazing juices. ENJOY :P
