Wash and soak foxtail millet for 30 minutes, then cook in water until tender. Cool completely.

Chop onion, tomato, carrot, cucumber, coriander leaves, and apple into small pieces.

In a large bowl, combine cooked millet, chopped veggies, and apple.

Add lemon juice, black pepper, salt, and olive oil. Mix well.

Stir in peanuts for crunch.

Serve in bowls, topped with extra peanuts and pomegranate pearls.
Tips
For added flavor, you can let the salad sit for a few minutes before serving to allow the flavors to meld. You can add honey for sweetness.
