Ingredients

  1. 2 TablespoonsOlive oil
  2. 8Garlic , chopped
  3. 1 CupOnion , chopped
  4. 2 CupsTomatoes , chopped
  5. 1 CupBell peppers , chopped
  6. To Tastesalt
  7. 1 TeaspoonRed chilli powder
  8. 1 Teaspooncumin powder , roasted
  9. 2 TeaspoonsHoney
  10. 1 Teaspoonthyme , dried
  11. 7eggs
  12. coriander leaves , fresh
  13. 1 TablespoonCoriander powder

Steps

  1. 1

    Heat olive oil in a pan.

  2. 2

    Add garlic and cook till slightly browned.

  3. 3

    Add onions and fry for a minute.

  4. 4

    Add tomatoes and bell peppers.

  5. 5

    Add a cup of water and cook till bell peppers and tomatoes are cooked.

  6. 6

    Add salt, red chili powder, cumin powder, honey and coriander powder. Cook for 3-4 minutes on high heat.

  7. 7

    Add half cup water and cook for a minute. Break eggs on top. Simmer the heat and let the eggs cook.

  8. 8

    Garnish with fresh coriander.

  9. 9

    Serve with a loaf of bread to soak in the heart warming gravy.
