Ingredients

  • 200 GramsNoodles
  • 1 TablespoonGarlic (Chopped)
  • 2 TablespoonsOil
  • 1/2 CupOnion (chopped)
  • 1 CupVeggies (Grated Carrot,Cabbage,Capsicum & Mushroom)
  • 1/2 TablespoonRed Chilli Sauce
  • To TasteSpring Onion (chopped)
  • To TasteSalt
  • 4Red Chilli
  • 1 1/2 TablespoonsVinegar
  • 2 TablespoonsGinger Garlic & (each)
  • 2 TeaspoonsSoya Sauce
  • 1 1/2 TeaspoonsWhite Pepper
  • 1 PinchSugar
  • 1 TablespoonOil

  1. 1

    For Schezwan Sauce, soak red chilies, ginger and garlic in vinegar for 30 minutes; make a smooth paste by adding water.

  2. 2

    Heat the oil in a pan, add ground paste and after 2 minutes, mix in little water, soya sauce, white pepper and sugar. When oil floats on the mixture, transfer it to a bowl.

  3. 3

    Cook noodles with 1/2 tsp of salt in boiling water for 12 minutes and drain the excessive water by transferring noodles into Colander.

  4. 4

    Heat the oil, add garlic and saute for a few seconds, the add onion and saute for a minute. Now add veggies and saute until its half-cooked.

  5. 5

    Mix in red chili sauce, prepared schezwan sauce and saute for 2 minutes in low flame. Add salt, cooked noodles and mix it. Garnish with spring onions and serve hot!!

  6. 6

    Adjust the red chilies according to your taste.
