I enjoyed clicking this jamuns and excited too to post this recipe. I have tried jamuns earlier, but this was the ever best..

Take khoya, maida and cooking soda in a mixing bowl. Mix well.

Slowly add water and make a smooth dough without any cracks.

Keep it aside for 5 mins. Then make equal sized balls.

Meanwhile prepare the sugar syrup with water, sugar powdered elachi and saffron, bring to boil and boil for 8 mins to 10 mins in a medium flame.

Fry the rolled jamuns meanwhile. Bring oil hot not smoking hot, but enough to fry the jamuns. Keep it in a low flame and add the jamuns and keep rolling the jamuns gently.

Drain it in kitchen towel and immediately add it to hotsyrup.

Let it get soaked well. Add essence lastly if desired
