Beetroot Chocolate Brownie

Brownies often remind me of my college days where brownies were part of any student gathering formal or informal. Brownies with a scoop of ice-cream made any college student happy. Well the problem was it wasn't necessarily moist and chewy.As a result, I gave up on eating or baking brownies. I brought it back to the kitchen because I needed to bake something sugary for a girley dessert evening. I have a well stocked pantry to bake anything at any time and we buy beets every week because I juice beets along with carrots and apples each morning - so I decided to make some beetroot chocolate brownie
To start with, if you are afraid the brownies will be overpowered by the taste and smell of beetroot, it won't happen. The brownies were just deliciously moist and chewy

Cook the beetroots until soft. There are few options - you can steam, boil, or you can pressure cooker it for a few whistles. Then puree it until smooth. You should get about 1 cup of beets. Set Aside

In a bowl whisk the butter and sugar together until smooth. Add the vanilla and then drop the eggs one after the other and whisk until smooth and well combined

Stir in the beets and mix well

In a separate bowl, mix the flour, cocoa powder and expresso powder. Slowly add it to the liquid ingredients and fold the flour mixture into the beet mixture

Final step: Stir in the walnuts and chococolate chips

Bake for 30mins or until a toothpick inserted comes out almost clean. This should yield about 16 squares if you want a nice big slice of brownie, if not you can half that and get smaller ones

Dust some icing sugar and cocoa powder to add a beautiful touch
