K and I are passionate about cakes! We like it when the cake is moist and not dense, so everytime we eat cake, we have a detailed conversation about it after it has been eaten LOL. We are that serious! Sometimes I think we are cake critics, cause we are always on the hunt for the best cake out here in town, and you will find us wandering into cake shops if we pass one
I decided to make this cake cause a) its been a real long time since I have baked one since D was born and b) I was wanting to be adventurous in the kitchen again ... I have been playing safe with recipes :). I had loads of fun piecing this cake together. The cake was quite soft, so I had to be real gentle when cutting a slice, cause it was all crumbly... I hope you get to try this easy recipe and hope the pictures help explain what I did! This is such a fun cake ... might be perfect for a birthday! :)

You also need two circular objects ex: a cup or a lid, cookie cutters... use your imagination!

Follow any recipe to bake the two cakes. If you can't be bothered with lots of baking, use store bought cake mix =). Bake the cakes seperately, and once done allow it to cool. I cut them right in the middle horizontally and you will end up with 4 layers: 2 of the vanilla and 2 of the chocolate

Now for the next step, we are going to cut out the circles! I used a lid to cut out a circle, and then used a smaller cutter and placed that in the middle. So in my case, I placed the lid about an inch from the edge, and then put the circle cookie cutter on the inside, an inch from the edge

Gently press down with your choice of cutters, until the cake is cut, and slowly remove the cake circles. You should have three circles from one layer

Next we are going to make two designs

Vanilla, chocolate, Vanilla

Finally time to assemble the cake. Grab a plate or a cake stand, and place your first layer (either design 1 or 2). Cover it with some frosting. I used vanilla frosting. Then add the next layer followed by the frosting. Repeat with the other two, alternating the colours

After the stacking is done, I added a little bit of frosting onto the outside of the cake and placed it in the fridge for about 15mins. Pull it out again, and then frost away! I stuck it back in the fridge cause it was a warmer day here

Cut the first slice and voila, check out the check board design on the inside
